I call it - Spanish Rice omelet Egg beaters soy cheese I/2 cup dry brown rice. 1/2 green pepper, grated 1/2 onion, chopped dry onion flakes 1/4 tsp dill weed 1 can low sodium tomatoes, chopped 1 small low sodium V8 3/4 cup water 2 1/2 tsp chili powder 2 tsp Worcestershire sauce Combine all ingredients in crock pot, except eggs and cheese. Stir and cover. Cook on low approx. 4 1/2 hrs. Cook one egg beater per person, top with rice, and a slice of soy cheese. The one I have in my cupboard right now <runs out to check> ah yes, it's The Wizard's - and is marked vegetarian and without anchovies. That's one brand.
