Guest guest Posted September 7, 2004 Report Share Posted September 7, 2004 What we had today. This is a popular Indonesian dish, easy to make, which consists of eggs in a piquant tomato sauce. Could be veganized by replacing the eggs by tofu but I've never tried this variant. RITJA-RITJA TELOR (egg) Ingredients (serves 4): 1 egg per person, 1 medium sized onion, 1 clove of garlic, 1 lb (450 gm) tomatoes, small can of tomato puree (70 gm), small quantity sambal oelek (chili paste) or chili powder, 1 teaspoonful powdered ginger, (optional) 1 red pepper. Finely chop the onion and garlic and fry until brown in a small amount of oil. Chop and add the red pepper (if used) and fry until soft. Add the chili and ginger. Add the tomato puree and the tomatoes (finally chopped) and stir for a while on a low heat. The result should be somewhat gooey and Very Tomatoey. Meanwhile fry the eggs until the yolks are hard, and add them (whole) to the mixture. Serve with boiled rice, and choice of green vegetables (boiled) or stir-fry vegetables.
