Hot White Gazpacho ^^^^^^^^^^^^^^^^^^^ 3 large cucumbers, peeled, seeded and chopped 2 cups Swanson's canned veggie broth (Midwesterners, don't substitute Kroger brand, which is horrible--sugary, tinny and just weird.) 1/4 cup green onion, chopped 1-2 garlic cloves, minced 2 cups plain yogurt 1 cup sour cream Split, seeded hot GREEN chiles, your favorite, to taste 1 Tbsp. vinegar if desired, your choice 1 Tbsp. fresh dill weed Salt and coarsely ground black pepper to taste 1 pinch cumin, optional but good Fresh tomatoes, chopped, for garnish Croutons for garnish Combine all but the garnishes and the vinegar together in a food processor and process until it's soup but still a little bit chunky. Chill until ready to serve; overnight brings out the flavors. Taste to see if you want to add the vinegar. Pour into bowls and garnish with tomatoes and croutons. Serve with cantaloupe wedges, garlic toast and iced tea, ice-cold beer or a good Liebfraumilch.
