This one has something that has me stumped. What is Braggs? And where do I find it? Elisabeth <snip> here's Barnard and Kramer's recipe from _The Garden of Vegan_. Okay, it's made by a person by the name of Bragg and is her special recipe, contains only pure water and soybeans and is not fermented. It's not like soy sauce because it's - well, it's Braggs. Sometimes referred to as Bragg's Amino. It's a stand-by for vegetarian cooking (though I imagine unheard of outside of the western world), because it gives a great depth of flavour to sauces and gravies and all that. It should be available at your healthfood store in various sizes of bottle. I get a medium-sized bottle and use it quite a lot ;=) As to the Braggs in this recipe: You could possibly substitute light soy sauce - tamari soy sauce perhaps. I say this because another Vegan Worcestershire Sauce recipe I have found uses tamari. I'll post that recipe below here, again with the understanding that I have not repeat not tried it. It looks so different from the recipe I posted earlier that it really makes one wonder - but remember that there are several brands of worcestershire sauce (the non-veg kind) and they all taste a little different, or so I am told by non-veggies who, bless em, kindly answer these kinds of questions for me ;=) - cuz they have somewhat different formulas/recipes. So yeah, use the soy sauce. Here 'tis: VEGAN WORCESTERSHIRE SAUCE II 6 Tbsp water 4 Tbsp tamari soy sauce 2 Tbsp apple cider vinegar 6 Tbsp apple juice concentrate or brown rice syrup 1 tsp blackstrap molasses 1 tsp powdered ginger' 1/4 tsp garlic powder 1/8 tsp ground cayenne pepper a pinch of onion powder a pinch of powdered cloves of pumpkin pie spice Blend all ingredients. Y0ou can do this in a glender, with an electric hand mixer, or an egg beater, or if you don't own any of these, just put everything in a jar or container with a tight-fitting lid and shake, until it's well blended. Store in the refrigerator, and use as called for in your favourite recipes. Makes 1 cup. [source unknown - somewhere off the net] Warning: Not tried and true by me. Best, Pat - who refuses to attest to the goodness of either of these recipes but will try one of them soon! ;=) And although I can't compare it to the non-veggie version, I can compare it to the Wizard vegan worcestershire sauce I have in the cupboard.
