Guest guest Posted September 14, 2004 Report Share Posted September 14, 2004 This is a rough outline of an un-recipe i use for vegetarian gravy. i don't really measure anything and just wing it along. Basically i use very finely minced onion and garlic which i saute in some butter. Then i add some finely chopped mushrooms, and continue cooking them until they begin to release their juices. Then i sprinkle in a few tablespoons of flour and make a roux. Then slowly add while whisking some mushroom broth; cook until thickened and the consistency you like for gravy. Add a few shakes of hot sauce, some sage, and salt & pepper to taste. At this point you can puree the whole mess or leave it with the texture of the mushrooms and onions; i prefer the later. i might play around with it more this year; gravy is always a cooking adventure. Some ideas i have are adding tamari, or Braggs, or some nutritional yeast flakes, or all of the above. ~ pt ~ Quote Link to comment Share on other sites More sharing options...
