Guest guest Posted September 15, 2004 Report Share Posted September 15, 2004 While the list is thinking out Thanksgiving, I am preparing a holiday meal for Rosh Hashanah (Jewish New Year) It is going to be pretty simple this year, not a real recipe. The main course could be used for other holidays. Being fall, there were nice acorn squash at the market. I halved and baked the squash (and had the seeds for a snack, baked with a little oil and soy sauce). I made a recipe of one of the Lundburg fancy rice mixes. I added some spices - cayenne and some Spike (instead of salt). Then I mixed in a cut up veggie burger, and filled the squash halves with the rice/veggie burger bits mixture. I will make a frozen veggie on the side. We will have soup first. I am making matzoh ball soup, but I used ground flax seeds whirred with water in the food processor to replace the eggs. Well, I guess I like to get a little ahead of myself - besides *Canadian* Thanksgiving is more than a month ahead of yours! ;=) We do have some other Canadian-based members on the list. I don't think we'll have it for Thanksgiving here (since I'm already working on a variety of curries etc. for the menu - in my head, I mean - a bit early to cook them LOL), but sometime soon, sometime soon. Gina PS: Thanks for the tips on freezing tofu...from my knowledge of science, I didn't think it would hold up to freezing, but being the cheapskate I can be, I'm getting sick of throwing tofu away if I forget to eat it....
