Here's what I made, along with a salad, followed by fresh figs. Stuffed Spaghetti Squash Ingredients (use vegan versions): 1 spaghetti squash (split evenly down the middle and cleaned of seeds) 1 medium eggplant (medium dice) 1 onion (medium dice) 1 red pepper (medium dice) 1 cup Dry textured soy protein (reconstituted w/ vegetable stock) 1 can stewed tomatoes 2 cup cooked long grain rice cayenne pepper to taste kosher salt to taste curry powder to taste 2 tablespoon olive oil Directions: Preheat oven to 450 degrees. In a sauté pan heat the oil. Add eggplant, textured soy protein, onion, and pepper. Cook for 10 minutes. Add salt, cayenne, black pepper, and curry powder to taste. Stir in rice, and add can of stewed tomatoes. Fill each half of Spaghetti Squash with mixture. Cover Squash in aluminum foil and bake for around 1 hour.
