Guest guest Posted September 27, 2004 Report Share Posted September 27, 2004 Hi Kelly! Yes, the chiles here start out green, then we get the monsoon season, then they start turning red. Once they're picked (red) they need to be dried. So if you can put them in the sun to dry, that would be best. In the salsa, the tomato-based one, I usually use green anaheims and jalapenos or banana peppers. The dried red ones are better in soups and stews. Here we make posole using them, which is a hominy and pork stew, and hard to convert to vegetarian. Best I can do with it is using turkey, so haven't converted that recipe yet! But I've added them to black bean soup, 2 or 3 pods, depending on how hot they are. You can tell how hot a chile is by how many veins it has inside. 1 or 2 veins is mild, 3 is hot, and 4 or more is EXTRA hot!! Another dish here that uses them is red chile sauce, and they can be either whole or ground to make this dish. I'll put together the recipe (I do have it converted to vegetarian!) and will post it in a day or two. To rehydrate red chiles, soak them in hot water, then you can use that water in your soup or stew also. A recipe using this is polenta - rehydrate the chiles, cut into strips, and place several strips (one for each slice) on top of the polenta before baking. They make very colorful dishes for the holiday season! Glad you're familiar with our chiles. People come here from all over this time of year to get them fresh.
