Here is my recipe for green chile sauce (I'm converting it from restaurant version here, so watch your quantities, and judge them for yourself!) GREEN CHILE SAUCE Saute together in oil: 1 Yellow Onion, chopped 1 Green Bell Pepper, chopped approx 2 tbls (?) Garlic, finely chopped (I like a LOT of garlic!) When translucent, add: 1 tbls coriander powder 1-1/2 tsp cumin powder 1/2 tsp whole oregano 1/2 tsp white pepper 1# green chile, chopped 3 pints of water Salt, to taste Cook together for 30 minutes. Make a roux, preferably using ghee and flour another method is to use arrowroot and water, but the ghee or butter calms the heat of the chiles if they are too hot. Add roux to chile mixture, tablespoon by tablespoon, until sauce is at desired consistency. Now, lets talk about green chile stew: Traditionally it is made with pork, although I have seen ground beef used, as well as ground turkey. Using your own homemade vegetable stock is the best vegetarian alternative I have found. I don't add TVP or tofu, but I have some on hand, so I might try it in a few days. I would say with TVP to add it with the vegetables, depending on it's freshness, and how long it needs to cook. You can always add it the last half hour the stew is cooking, if it is very fresh (you don't want it to fall apart and dissolve). Take the basic green chile sauce recipe above, and do not thicken. Use vegetable stock in place of water. Add diced potatoes, whole kernel corn, and cooked pintos. Add some canned stewed tomatoes. Add more water or stock as needed to get to the desired consistency, letting the stew cook until the vegetables are done. Enjoy! Aurora I'll get the red chile sauce recipe to you tomorrow.
