1. What is your name or what may we call you?

2. How long have you been a vegetarian, or how long have you been interested in

vegetarian cookery?

 

I have been completely meat-free since July of 2004, but have been cutting back

substantically for the last 3 yrs.

 

3. What country are you in now?

 

Canada

 

4. What city, town or region?

 

Winnipeg, Manitoba (straight north of North Dakota for those of you wondering

where Winnipeg is) ;-)

 

5. What age are you (just roughly, very roughly!)?

 

my 40th birthday is around the corner!

 

6. Why did you join this group (apart from receiving an invitation! *lol*)?

 

my hubbie and i are BIG into spicy ethnic foods. we are real hot-heads and so

far our 2 children (7 & 9) seem to be following the same path.

 

7. What kinds of (vegetarian) foods or cuisines interest you most?

we are really open to all kinds of recipes, but particularly main course meals

and anything kid friendly.

 

8. Is there anything you'd like to tell the group?

 

no, but i have a question - i can't seem to find " temphah " that is mentioned

here and is in so many recipes. i have looked in large grocery stores where they

sell tofu and other veggie products. any hints?

Hi Jo in Winnipeg (I went to school there for six years way back when!) ;=)

 

Glad to have you here at Vegetarian Spice - we certainly hope you enjoy the

list. There are some great recipes in the Files, so do have a look around!

 

About tempeh: it is, as you know, an Indonesian invention, similar to but oh so

much more scrumptious than tofu. The only place I have found it so far here in

Montreal is in a local healthfood store - right next to (wait for it!) the

frozen

meat :=( Fortunately it freezes nicely and both items - tempeh and me*t - were

well wrapped and sealed in plastic. Bleh! So just ask at the store - you're

unlikely to find it, I think, at your regular grocery store or supermarket, but

you

can try of course. It's wonderful flavour and texture are a great addition to

the

tastes and textures of all kinds of meals, asian or otherwise ;=) - and of

course

is even better if you marinate it for a couple of hours or overnight to give it

just

the right taste you want for each different dish.

interesting! university or younger? nice to " meet " you Pat, so you are in

Montreal? i love that city. parlez-vous francais? mes enfants vont a l'ecole

*thanks* for all the info, i was thinking it was something i should ask

about at my local organic food store.i zip in there for certain items often,

but didn't think of asking there. hopefully they will have it, because it

sure sounds good and the fact that you can freeze it makes it even more

attractive. i will let you know if i find it. btw, do you pronounce it

" temp-ah " or just like it looks with an actual " eh " sound?

 

one more question: last night it was my hubbie's b-day and we ordered from a

vegetarian chinese takeway place (the tofu in spicy peanut sauce rocks

there!) but noticed they have something called " gluten balls " in different

kinds of sauces. have you ever tried those and what are they like?

If you check the photo section you will see a folder of photos that I

uploaded showing my home-brew tempeh maker. I have made an open

commitment to this group to upload instructions for building this

tempeh incubator as well as general instructions on how to make

tempeh. And I haven't forgot, just a time management challenge.

 

As many Vegetarianspice group memebers have mentioned to you, tempeh

is a traditional Indonesia fermented food. I spent 17 years in

Indonesia and visited a number of small mom & pop tempeh producers.

Over the years I have refined the technique and figured out how to

cheaply create the right conditions to 'grow' tempeh in the home,

anywhere in the world. The incubator above is the tool for this.

 

There is normally some form of manufactured tempeh availble in most

supermarkets these days. But, as a point of reference, I would view

these in the same way you might compare canned peas to fresh-picked

snow peas. There is a world of difference in flavor, texture, aroma

and even nutrition between these mediocre processed tempehs, and the

real thing.
