I love tofu, it is very versatile and fun to cook with once you get the hang of it. Squeezing excess water out of tofu is one way to make it absorb flavors better- wrap it in a towel, or cheesecloth or paper towels and then lay a heavy book or pan on top to " Press " the water out. This will make your tofu a sponge ready to soak up flavors. You can then marinate it depending on how you want to use it. If you find you want your tofu really flavorful, you may want to marinate it for up to 24 hours. You can marinate it in the usual way, you may want ot choos strong flavors if you find tofu too bland yo your tastes. Another simple prep is to take a sauce, like BBQ, or peanut, or a chinese black bean or whatever you like, tkae about 2 cups of that, mix with one cup of water, and pour over 1/2 inch slices of tofu in an oversafe pan. (Thorw in some chili pepper to make it spicier, if you like!). Cover hte pan with aluminum foil and bake at 375 degrees for half an hour. Unover and bake another 15-20 minutes until the water is evaporated. This infuses the flavor ito tofu and makes for a nice sauce on top too. That's all I can think of for now, enjoy!
