Guest guest Posted October 29, 2004 Report Share Posted October 29, 2004 Found this recipe over 4 years ago... 2-4 chipotle peppers 1 lb. linguine 4 medium shallots, diced 8 cloves garlic, minced 1 Tbsp. olive oil, plus more for the pasta 12 Roma tomatoes, diced Salt to taste Place the chipotle peppers in a small bowl and cover with water; let sit for 10 minutes. Once the peppers are rehydrated, drain, seed and dice them. Place the pasta in a large pot of boiling water and cook until it is al dente. Meanwhile, saute the chipotles, shallots and garlic in 1 Tbsp oil over medium heat for 3 minutes. Add the tomatoes and simmer for 8 minutes. Drain the pasta, then lightly oil and salt it.
