spicy tofu scramble

I kow there are *tons* of ways to make tofu scramble, I made this one tonight

and I thought it was really good, so I thought I'd share.

 

 

Spicy tofu scramble

 

Ingredients:

half pound extra firm tofu

pich or salt and pepper

1 tsp. crushed garlic

2 tbsp. nutrional yeast

1 1/2 tsp. Old Bay seasoning

1 tsp. red wine vinegar

1/2 tsp oregano

 

1/3 cup finely diced red pepper

1/3 cup finely diced celery

1/2 cup finely diced onion

1 small red chili finely diced

 

1 tsp. olive oil for cooking.

 

Take the tofu block and wrap in a towel, put a large weight on top of it to

press, so the towel will absorb the water. Let sit for 5 minutes.

Remove the tofu from the towel. Cut the pressed tofu into 1X1 inch cubes and

place in a bowl. Add the crushed garlic, salt, pepper, Old Bay, nutritional

yeast, Oregano and red wine vinegar. Mash together until all ingredients are

mixed.

 

In a heated pan, add the tsp. of olive oil. Once the oil is heated and the pan

at about medium high, add the diced celery, red pepper, onion and chili pepper.

Saute for about 5 minutes, the add the tofu mash mixture. Continue to cook for

another 5-8 minutes, adding a little more vinegar or water (and I mena a little,

less than a tsp!!) if tofu becomes to dry or burns.

Then voila! put in a bowl or plate and serve with your favorite hot sauce. I

used Lizano, which is Costa Rica's " typical " hot sauce. Yum!

This looks wonderful and would be very tempting for lunch today, I think;=) My

problem is that I have no Old Bay Seasoning in the house - have never used it

in fact - and I see that the recipe really relies on that one and a half

teaspoons

of this very exotic spice mixture!

 

But hey, I googled on Old Bay Seasoning, found out that it is a classic

Maryland mixuture, organic, kosher, suitable for vegetarians, blah blah blah -

and contains the following ingredients (I add this information for the benefit

of

members outside North America ;=)):

 

CELERY SALT (SALT, CELERY SEED), SPICES (INCLUDING MUSTARD,

RED PEPPER, BLACK PEPPER, BAY [LAUREL] LEAVES, CLOVES,

ALLSPICE [PIMENTO], GINGER, MACE, CARDAMOM, CINNAMON), AND

PAPRIKA.

 

Pretty impressive stuff!
