Roasted loads of peppers - mostly jalapenos, a handful or so of habaneros, and a big bunch of ?? oversized serranos or something. Then they were cooked in brine - vinegar & salt, I think. Then whizzed in the food processor. Then the mess sat on my counter for 3 weeks or so. It reduced quite a bit & cleared your sinuses INSTANTLY. It burned a hole in my tongue when I tasted it. Even dh doesn't like it that much - too much heat to let the flavor come through. (this guy puts Tabasco on nearly everything, the most offending being my homemade mac & cheese). He bottled it up & took in several jars to work to give out as gifts. His recent hire, a lady from India, wanted to taste. She scooped up a 1/2 spoonful. DH warned her but she shrugged him off. She ate it, smiled & said it reminded her of some kind of pickled something from home. She didn't even flinch. WOW. I just felt like sharing that. We're positive wimps when it comes to hot spices, which is why cookbooks for 'western' consumption have to be specially written. I remember in my pescatarian days eating chili cr*bs in a non-tourist restaurant in a smaller city in Malaysia . . . . I finished the meal, because everything was so superbly cooked, but not without wiping my eyes a few times ;=) No one else seemed troubled.
