Vegetable Salad with Peanut Dressing

 

4 servings

 

250 g (8 oz.) chopped white cabbage

 

250 g (8 oz.) bean sprouts

 

4 carrots, sliced into thin strips

 

4 celery stalks, sliced into thin strips

 

1/2 cucumber, sliced into thin strips

 

1 fried onion* (see below)

 

Salted peanuts

 

Sliced chili pepper

 

 

 

 

Peanut sauce

 

 

1 small onion, finely chopped

 

1 clove of garlic, minced

 

1 small piece of galanga or ginger, peeled and minced

 

4 tbsp. crunchy peanut butter

 

1 tbsp. oil

 

1 tbsp. lime juice or 1 tsp. tamarind paste

 

1 tbsp. brown sugar

 

1 tsp. cumin

 

A pinch (1/4 tsp.) powdered chili

 

 

 

Blanch the cabbage, carrots and celery in boiling water for 4

minutes; drain and cool;

place the bean sprouts at the bottom of a large bowl; top with the

cabbage, carrots and celery; finish with the peanuts and fried onion.

 

 

*Fried onion

 

Peel the onion and slice on a mandolin to obtain very thin rings;

dry on paper towel and fry in hot oil until golden brown.

 

 

 

Peanut Sauce

 

Heat the oil in a saucepan; reduce the heat and cook the onion and

garlic until translucent, about 5 minutes;

add the galanga, chili and cumin; cook a minute longer;

add the tamarind paste or lime juice, peanut butter and sugar; mix

well;

slowly blend in a little hot water to form a thick sauce;

pour over the vegetables; toss well and serve.
