Guest guest Posted November 25, 2004 Report Share Posted November 25, 2004 Every winter I seem to arrive at a new recipe, and this one came by accident. Most longtime vegetarians I know have cooked potatoes every way we know how, and this recipe is something I made on the fly to make a quick, tasty, filling snack! Needed: 1 good sized russet potato 1 ceramic bowl spices 1tsp olive oil 1Tsp water Microwave oven I take one good sized russet potato, wash, and leave the skin on. Then, cut in half long-ways, and each half in half, and keep cutting in that manner until you have a number of long, slender wedges. Then I place them in a criss cross pattern in a deep rice bowl. Next, add a slpash of water, just enough to add some steam, salt lightly, add a dash of pepper, cayene, and cumin. Next, drizzle on some olive oil, then sprinkle on finely ground basil. Cover the dish, and microwave for three minutes. After it's done cooking, I like to leave it in the microwave for about a minute, then serve. It may take some experimening to find the appropriate amount of spices you like. One alternative I enjoy, is to substitute soy sauce for the water and salt. Another alternative is to add a washed carrot, sliced at long angles. The added carrot will add about a minute to the cooking time. Two medium sized potatoes take about five minute cooking time. I take great care in cutting and chopping, particularly after having chopped the tip of a finger off once (OW!) Mindfulness is so important in preparing foods. I for one am not a big fan of the baked potato, plus, by cutting up a potato, it will cook quicker. I guess it stems from my Southern roots, but I love potatoes cooked just about anyway, and NOTHING tastes better than home-made organic potato chips or french fried potatoes! I live a busy life, and have but a few sit-down meals each week, so, healthy, quick snacks are a must for me. Good health, and good eating to all!
