Guest guest Posted December 3, 2004 Report Share Posted December 3, 2004 This is one of my famous tofu recipes that offers an abundance of flavors, and is only limited by your imagination. When cooked just right, you'll have a tofu slab that is crispy on the outside that will melt in your mouth! Here's what you need: 1 lb Firm Tofu Skillet, the larger, the better Olive Oil Brewers Yeast Marinade Sauce Glass Baking Dish Ceramic Bowl Spices First, open your tofu and drain it. I like to sit the whole slab on a large plate, then set one or two large dinner plates on top, to force as much water out as possible. As the tofu sits there, about 10-20 minutes, you can prepare your marinade. I like to start with soy sauce and water, then season to taste. My base of spices often stems from basil and cumin, but feel free to experiment with your own favorites, too! One of my friends like using Annie's salad dressings as a marinade base. Just make sure that you like the flavor before you marinade the tofu. After the tofu has sat and drained awhile, let the it sit on a clean towel till the towel is soaked. Next, cut the tofu into 1/4 " to 3/8 " thick slabs, then lay only as many as will fit into the bottom of your baking dish, and cover completey with your marinade, then let sit for 20-60 minutes, turning every 10-15 minutes. The longer you let it sit, the more the tofu will soak up the flavors. Pre-heat your skillet on a medium high setting and add just enough oil to coat the bottom. The secret to making the tofu crunchy, is after it's marinaded, roll in brewers yeast, then cook it in the oil, turning it as it browns, and sprinkling more yeast on it each time you turn it. Use a test piece before loading up your whole skillet. I like the skillet hot, but not hot enough to throw oil, if you know what I mean? After the tofu is nicely browned, lay it on a plate or paper towel, and be careful not to burn it. When these are hot and crispy, they will melt in your mouth. They are also very good the next day, so go ahead and cook up the whole one pound! This is a great side for breakfast, lunch or dinner, as makes a great snack too! Enjoy!
