Guest guest Posted December 3, 2004 Report Share Posted December 3, 2004 This dish can be ovo-vegetarian or vegan, depending on whether or not you choose to top with strips of fried egg or strips of tofu. We have ours with tofu. It is hot and spicy and a true delight! Amounts here are approximate - you will want to adjust according to your taste for chillies and for the spicy heat of your red curry paste (they vary). If too spicy, add more cooked rice. 2 Tbsp sesame oil 2 thai green chllies 1 dried red chilli, crumbled 1 tsp Thai red curry paste (be careful to choose one without fish paste) 2 Tbsp light soy sauce 3 cups cooked rice A few slices tofu, fried, or 1 egg, beaten and fried as omelette and cut in strips Green onion and cilantro/coriander leaves for garnish peanuts for garnish (optional) Heat oil, add chillies and stir briefly, add curry paste and soy sauce and mix. Add cooked rice and stir to coat all grains in the sauce. In a separate pan, fry the tofu or eggs and cut into fine strips. Put the fried rice on a serving platter, top with tofu or eggs and garnish with the onion, cilantro/coriander leaves and, if you like, a few peanuts. NOTE: There are many versions of this dish. Some include galangal or ginger. In others, the beaten eggs (if used) are stirred into the rice and stirred with the rice until they are cooked.
