Anyone have an interesting root vegetable side dish?

Well, I have a couple that a (ex) friend of mine used to make at all

the big holiday dinners:

 

1) Mashed carrots and turnips. Basically you cook them, mash them

seperately, then mix them together. It's really reallly yummy!!!! (I

think you add some butter and salt and pepper too)

 

2) Now, I'm not sure about the exacts on this because I never

acctually made it myself, but it tastes phenominal even though it

looks wierd. Anyway, it was sliced beets (fresh), carrots, turnips,

parsnips, and I think an onion baked until everything turned this dark

red. It looks wierd, but tastes so good. I'm not sure if it's just

baked or if he added brown sugar or anything, but it was always a hit.

 

That's all I know...I love turnips, especially this time of year....I

always try and cook something with them. Although, I'm moving to

California in January, so I'll have to make my annual turnip dish out

there this year...anyone have a good turnip recipie?

How interesting? I roast my root veggies w/a smidge of olive oil at 400F for

30-45 mins until browned, stirring occasionally & sprinkle w/kosher salt when

they're done. Voila...yummy veggies. Beth

Ah! Acctually, I think that's how he did it! It sounds right to me. It

is sooooo good though.

Hey There Bill!

I have a favorite recipe for roasted root veggies....the fresh herbs

really make this dish,and nowadays you can find them at any produce

section of most grocery stores....

 

4-5 med red potatoes scrubbed well ,skins on and cut into wedges

4 carrots,(skin left on)

one med onion cut into wedges

4-5 cloves garlic coarsley chopped

5-6 fresh sprigs of thyme,(or 1 1/2 teaspoons dried)

two 4 " sprigs rosemary (or one teasp dried)

1/4 cup organic olive oil

Method: put oil into large heavy Cast iron skillet brown the onions

and garlic first then place into casserole dish. Next, brown the other

veggies and herbs together,adding fresh raw sea salt and pepper to taste.

Place into casserole dish and bake until tender(about 25-30 minutes)

Makes four med servings or two very generous ones! Bon appetite!
