Recipe: Spicy Millet

I keep collecting millet recipes, but I avoid trying new ones because I

like this recipe so much. I have eaten it cold for breakfast or for a

picnic lunch:

 

Helen's Spicy Millet

 

5 1/4 cups water

1 1/3 cups millet

3/4 tsp dill seed

3/4 tsp dill weed

1/4 tsp. Celery seed

1 tsp tiny red peppers

3/4 tsp onion powder

3/4 tsp garlic powder

3/4 tsp onion or celery salt

1/4 tsp turmeric

1/4 tsp poultry seasoning or sage

2 tbs lecithin granules

2 tbs nutritional yeast flakes

1/4 teaspoon cayenne

2 tbs mock " chicken” boullion

 

 

Pour into a greased casserole and bake at 350º for 1 hour.

Will the world stop turning if I leave the lecithin granules out? The recipe

looks wonderful but I don't have that ingredient... Or is there a substitute.

I'm not sure what lecithin granules DO, lol.Bethie

Beth, I imagine if you left the lecithin out it would taste a little

less " rich " for want of a better term. I look for lecithin from soy.

It tastes a little like egg yolk and I add it to ground flax to make

flax egg replacer taste more like eggs. It is a natural health

supplement.

 

There is a LOT of healthy stuff in this recipe. Helen James, in

Cardiff, Ontario, Canada is the author of this recipe. She and her

husband Tom used to have a health food store.

Thanks, Maida. As I was copying the recipe, I thought of another

question....would it work to use fresh onion & garlic vs. powders? Beth
