Guest guest Posted January 4, 2005 Report Share Posted January 4, 2005 I was messing around in the kitchen with a very ecclectic mix of foods after the long festive season and came up with this hope it's clear enough and enjoyed by some Entrée for 4 1 Small tin butter beans 1 small red onion 1 small deseeded chilli Dash white wine Dash Soya milk 1 slice toffuti mozzarella style Pinch rosemary and sage 1 teaspoon coarse grain mustard Olive oil finely dice the onion and throw in a small amount of olive oil add finely chopped chilli, ground pepper, fry gently for a couple of minutes. Add butter beans and herbs stir and fry a little more, toss in the wine and soya milk stir and heat through, lastly add shredded slice of mozzarella style cheese simmer stirring occasionally. Otherwise I'll probably name it something boring like Dave's Butterbean Medley :=( It's nice that there are others around who like mixing things up and putting them on toast - we keep coming up with new ideas here too.
