Vegetarians have an obligation to teach meat eaters the joys of our cooking. All parents and teachers have an obligation to teach children how to cook and prepare food. In 1913, America's great health reformer, Ellen White, wrote: " The science of cooking is not a small matter. The skillful preparation of food is one of the most essential arts. It should be regarded as among the most valuable of all the arts, because it is so closely connected with the life. Both physical and mental strength depend to a great degree upon the food we eat; therefore the one who prepares the food occupies an important and elevated position. " There is a point in time between January 1st and January 2nd in which many New Year's resolutions are broken. Vegetarian Day will re-affirm one's commitment to " do the right thing " to our bodies. Vegetarian Day is not meant to replace the annual celebration which falls on Gandhi's birthday, October 1st. On that day, conferences, lectures, and celebrations of all types are held to promote animal rights. Vegetarian Day will be exclusively dedicated to honor and celebrate the abundance of food choices that replace the standard meat diet which results in abuse to animals and abuse to the human body. Vegetarian Day can be celebrated with a party-buffet at home, or a visit to a local vegetarian restaurant. Invite your friends and family! Celebrate life by not eating dead animals. Begin your Saturday by purchasing the freshest varieties of produce, and spend your afternoon preparing Chinese, French, Indian, Italian, Middle Eastern, African, and American foods. Serve an Un-Turkey (made by Now & Zen). Prepare homemade soy-based " Vice Creams " for dessert. Bake your own breads. Make a 20-ingredient salad. Be festive in teaching others that a plant-based diet is infinitely more interesting than pig butt or turkey carcass. Enjoy an alcohol-free meal. Serve homemade apple cider and freshly squeezed orange juice. Why do we need a new holiday? Ellen White said it best. " Our race is in a deplorable condition, suffering from disease of every description. Many have inherited disease, and are great sufferers because of the wrong habits of their parents; and yet they pursue the same wrong course in regard to themselves and their children which was pursued toward them. They are ignorant in regard to themselves. They are sick and do not know that their own wrong habits are causing them immense suffering. " (Testimonies, Volume 1, 1867) The first annual Vegetarian Day, 2005, will be observed on January 8th. Let's make this a yearly event.
