This way, if not exactly traditional, is quick and easy - and makes a great snack or a light meal. FALAFEL (VEGAN) 2 cups cooked chick peas (you can use canned, but drain them well) 4 cloves of garlic, finely chopped 3 Tbsp chopped onion 2 or 3 chopped green chillies (to taste) 1 tsp dried mint 2 Tbsp fresh chopped cilantro (coriander leaves) 1/2 tsp turmeric 1/2 tsp ground cumin 1/2 tsp sea salt 1-1/2 tsp fresh lemon juice 1 Tbsp olive oil 2 Tbsp water 2-1/2 Tbsp flour a few grinds of fresh black pepper Garnish: Lemon wedges and cilantro sprigs to serve Mix all intredients except the garnish in the blender until smooth. Taste for seasoning and blend a bit more to mix it all in if you add anything at this stage. Wet your hands and form into about a dozen balls or more. I flatten mine a bit to make sort of oval patties. Fry in a skillet (in batches if necessary) until browned on all sides. Drain on paper towels. Arrange on platter, decorate with the lemon wedges and sprigs of cilantro and serve with a salad of your choosing.
