Guest guest Posted January 6, 2005 Report Share Posted January 6, 2005 I tried this recipe, with a few modifications, and it came out really well. It will make a good dish for company. Aubergines are eggplants, of course. I used one big eggplant, cut it in half crosswise so there were two tubes of eggplant. I don’t use raisins, so I replaced the sultanas (white raisins) with small slices of Granny Smith apple. I didn’t have any coriander. I made it ahead and reheated it with canned tomato sauce on top. Aubergine towers & roast tomato sauce (serves 4) 4 small aubergines 2tbs olive oil 1 small onion, chopped 2 garlic cloves, crushed 2tsp grated lemon rind 1tsp ground cumin 1â„2tsp ground cinnamon 50g/2oz sultanas 50g/2oz cashew nuts, toasted and chopped 2tsp tahini (sesame seed paste) 50g/2oz sun-dried tomatoes in oil, drained and chopped 2tbs fresh coriander, chopped Salt and pepper To serve: Roast tomato sauce 1. Slice off top and bottom of aubergines and stand upright. Scoop out flesh leaving skin intact. Chop the flesh. 2. Heat oil in a frying pan and fry onion, garlic and spices for 5 mins. Add aubergine flesh and lemon rind and continue to cook for a further 8 mins or until tender. Stir in remaining ingredients and season to taste. 3. Spoon mixture into aubergine cases, brush with oil. 4.
