RECIPE: Spanish Omelette With A Bite (Ovo-Vegetarian)

As a lunch or light supper, hot or at room temperature or even cold, Spanish

omelettes can be cut into smaller pieces (when cool) and used as great little

snacks. We all have our own ways of making them. This is one of ours:

 

SPANISH OMELETTE WITH A BITE (OVO-VEGETARIAN)

 

1 - 2 Tbsp olive oil

1 onion, finely chopped

4 cloves garlic, chopped

1 lb (or 450 grams) potatoes, cooked and diced

1 red bell pepper (capsicum) or mix of half green and half red, chopped

2 or 3 Tbsp corn kernels (cooked)

2 or 3 fresh green chillies, finely chopped (or to taste)

Crushed chillie flakes (to taste)

4 eggs, beaten

4 or 5 sliced green or black olives, for the top

3 or so Tbsp chopped cilantro (coriander leaves)

salt and freshly ground black pepper as needed

 

Using an *ovenproof* (metal handled) skillet or frying pan (watch for that

handle!), saute the onion over medium heat until soft, add garlic and potatoes

and stir until they all start to brown. Add the bell peppers (capsicums) and

corn, chilles, chillie flakes and stir well with a little salt and black pepper.

Add

the beaten eggs and scatter the cilantro (coriander leaves) and sliced olives

over the top.

 

Continue to cook for around ten minutes or so (meanwhile, heat your broiler)

until, by dipping down the side a little with a spatula and peeking, you can see

that the underside of the omelette is cooked. Remove your skiller from the

heat and cook the omelette in the broiler for around 5 minutes (careful not to

let it burn - nothing nastier than burnt eggs!) until omelette is golden.

 

Remove from broiler. Put a broad spatula gently underneath and help the

omelette onto a serving dish by sliding from the pan to the dish so not to break

the omelette. (If it does break, never mind - quickly assemble it into the

appropriate shape and scatter more coriander leaves on top ;=))

 

Cut into triangle slices and serve with salads, etc., and crusty bread OR let

cool, cut into smaller pieces and use as snackfood.
