Guest guest Posted January 12, 2005 Report Share Posted January 12, 2005 I adore spicy foods, and I make this, and variations of this depending on what veggies I have in the fridge, at least once a week. INGREDIENTS: ----------------- 1 Spaghetti Squash (or more if serving more people) 1 small red onion cut into large dices 1-2 garlic cloves- crushed 1 tsp. thyme (or italian seasoning to taste) 2 tbs. olive oil 1-2 zuchinni cut in quarters 1 pkg fresh mushrooms sliced, or quartered (use as many as you like, or none at all!) any other veggies you like (broccoli, peppers, asparagus, carrots, etc.) 1-2 tomatoes diced (or 1 can of diced tomates any variety drained) salt and pepper crushed red peppers to taste (I use a lot!!!!) Splenda or sugar to add a slight sweet taste to the bite paremsean cheese DIRECTIONS: ----------------- First, I cut the spaghetti squash into halves and place cut-side down in a baking dish with enough water to have most of the squash out of the water (depending on the dish, 1/4 to 1/2 C water usually suffices). I place it, covered with plastic wrap, in the microwave and cook on high for 7-9 minutes or longer until the squash is completely cooked. While the squash is cooking, in a skillet over med-high heat (or high if I am in a hurry), I place the red onion, garlic, and 1Tbs olive oil. I saute until the aroma gets strong, then add the zuchinni, mushrooms, and other veggies and saute until tender. I then add the diced tomatoes and seasoning including the crushed red peppers and a few piches of sugar to taste. I adore hot and slightly sweet tastes, and it is a fabulous complimentary taste. I also add salt and pepper to taste here as well. Once the squash is done, get out bowl and scrape the squash into the bowls. Drizzle the squash with the remaining olive oil and salt and pepper if you wish. You can also sprinkle with parmesean cheese. I then top the mounds of spaghetti squash with my veggie mixture and add more crushed red pepper to suit. Sometimes I add bottled spaghetti sauce to the veggie mixture if I need it go further.
