Guest guest
a friend who was married to an englishman told me that my recipe is not authentic, as it lacks lard and meat! thank goodness for that! anyway, here is something i've created by accident, and is a partial microwave recipe. if you don't use a microwave, then i'm sure you can use a conventional oven... if you are wheat allergic, then you can probably adjust the ingredients to fit your needs. ingredients: 1 large russet potato, washed, unpeeled, and sliced into, to allow steam to escape 1/3 c whole wheat flour 1/3 c large flake brewer's yeast water 1/4 cup mixed veggies 8 dashes of soy sauce dried basil, ground pepper, fresh garlic, and whatever other seasoning you may like first, cook the potato. i bake mine in a microwave for 4-5 minutes, depending on how large it is, but it can be boiled or oven baked. i use a deep ceramic bowl, covered with a plate. then when the spud is cooked, mash it with a fork, skin and all, and add a little olive oil, and pepper, then set it aside. in a #6 size iron skillet, i place the brewer's yeast and flour, then add just enough water to make the mixture a little soupy. first stir it all well, to be sure there are no lumps, then place over a medium high heat burner, and stir while adding the spices and mixed veggies. i like to use frozen organic veggie blend. when the gravy is just starting to thicken, remove from heat, and pour all the contents on top of the mashed potato. use a spoon to make sure you get as much of the gravy mixture as possible. cover the potato with a plate, and microwave for one minute on high. open the microwave and raise the plate for a few seconds. place the plate back on top of the bowl, and microwave for 1 minute on high. when done, remove the bowl, and enjoy! be careful, as it will be piping hot. the gravy should form a thick almost crust-like coating over the potato. i discovered this by accident one night when i wanted mashed potatoes and gravy, not realizing that the results would be so amazing! if anyone cares to convert this using a conventional oven, please send me the conversion. thanks! josh -- veggiefilmmaker
