Guest guest Posted January 31, 2005 Report Share Posted January 31, 2005 Just an nice thing for a cold day POTATO LEAK SOUP (VEGAN) 3 or 4 lbs. or deiced potatoes 1 large onion, diced (divide this into two equal parts) 1 large leak, diced small (use food processor) ½ bunch of green onions, diced or chopped 1 red or green pepper, diced 4 garlic cloves, chopped fine ¼ cup soy margarine ¼ cup water 1 tablespoon onion powder 1 teaspoon garlic powder salt to taste Cook potatoes and ½ diced onion in just enough water to cover. Sauté until tender: leaks, green onions, peppers, other ½ of diced onion, chopped garlic, in soy margarine and water. ( water keeps veggies from turning brown) When the potatoes and onions are cooked, do not drain. Puree 2 cups of the cooked potato and onions, and mix back into the water used to cook the potatoes and onion. The puree will thicken the broth and give a smooth texture. Add sautéed leaks, green onions, etcetera to potatoes and onions. Simmer for about 10 to 15 minutes This soup will taste even better if allowed to sit a day or two.
