Guest guest Posted February 2, 2005 Report Share Posted February 2, 2005 Hey spice freaks! Last night, I started with a sweet potato and didn't know what I was going to do with it, except steam it. So, I came up with the following (one large serving)... Sweet Potato & Veggie Indian Surprise... 1. Peel the skin off of a small sized sweet potato and cut into 1 " cubes. 2. Make 1/3 to 1/2 cup of basmati rice. I made 1/2 cup and used about 1/2 of it. I used basmati rice with vegetables from Trader Joe's 3. Steam the sweet potato cubes and time it so they're ready when the rice is ready. 4. Cut small (i.e. 1.5 " ), thin slices of red pepper, carrots, and onions. 5. Dice garlic and fresh ginger. Add sea salt and black pepper. 6. When sweet potatoes and rice have about 10+ minutes* left, simmer veggies, garlic, and ginger on low (to med. low) in 1/2 cup of Indian Simmer sauce (I got mine from Trader Joe's). Add 4 ounces of water. Add 1/4 tsp of red (or green) Curry Paste. 7. After you simmer all contents of the pot for 10+ minutes, add the sweet potatoes, rice, turn very low and keep on heat (stirring) for about 2-3 minutes so everything is mixed up nicely. 8. Throw in a bowl and garnish with scallions. If you like cayenne, sprinkle a little on top. *I simmered for about 10 minutes and the veggies were still nice and crisp. Guest guest Posted February 5, 2005 Report Share Posted February 5, 2005 Speaking of the simmer sauces from Trader Joe's, my roommate and I used the Thai Green Curry sauce tonight and it was VERY yummy! (Cooked up with some garlic, onion, eggplant, red sweet pepper and basil infused olive oil!) It's spicy enough by itself, so, since I was eating with a lightweight, I didn't add anything extra...But I bet it would be amazing with an extra chili or three...
