CARROT SALAD, South Indian style -------------- Ingredients: 1/2 kg carrot, grated 2-3 tsp lemon juice, fresh 1/4 cup fresh chopped cilantro leaves 2 medium tomatoes, deseeded and chopped small 1 tsp small black mustard seeds 1 tsp any cooking oil Salt and fresh-ground pepper to taste Optional: 1/4 cucumber, chopped small 1 green chilli, sliced into very thin rounds Method: 1. Heat the oil in a small pan; add the mustard seeds, cover the pan and let the seeds pop. If using the green chilli, add it now and fry it till it starts turning brown. Take the pan off the heat and set aside. 2. In a salad bowl, toss the grated carrots, tomatoes and cilantro along with the popped mustard seeds. Add lemon juice and seasoning to taste. Toss well again until evenly seasoned. Serve chilled.
