Guest guest Posted February 18, 2005 Report Share Posted February 18, 2005 Hi, I saw the messages about the koftas and thought I'd send in my recipe for kofta curry, for what it's worth. The Indian vegetarian version of meatballs, I expect It does taste pretty good over spaghetti but the more traditional way would be as an accompaniment to Indian breads or rice. KOFTA CURRY ------------------- Ingredients: For the koftas: 4 medium potatoes, boiled 1 cup peas, cooked 2 medium carrots, boiled till tender 1 onion, chopped fine Salt to taste Green chillies chopped fine (to taste, minimum one) 1/2 cup gram flour + another 1/2 cup extra to dredge Oil for frying For the curry: 2 cups water or vegetable stock 4 tomatoes, chopped - preferably pureed 2 onions, chopped fine 2 tsp ginger-garlic paste (1 " ginger and 3 cloves garlic grated) 1 tsp finely minced fresh green chillies or 1 tsp red chilli powder (or to taste) 1 tsp coriander powder 1 tsp cumin powder 1/2 tsp cinnamon powder 1/2 tsp turmeric powder 1/4 tsp cloves powdered (optional) 1/2 tsp dried fenugreek leaves (optional) 1/2 cup fresh cream 2 tbsp fresh cilantro leaves chopped (for garnish) Salt to taste Method: ----------- Koftas: 1. Heat the oil in a wok or fryer. While the oil is heating, mash the kofta ingredients together (add as little water as possible) and make small balls (small than a golf ball). Dredge each ball in the extra flour and deep fry to a golden brown. Set aside to drain on kitchen paper. Curry: 2. Now heat the ghee and fry the chopped onions till they begin to turn golden brown. Then add the ginger-garlic paste, chillies/chilli powder and turmeric powder and fry for 30 seconds or so until fragrant. 3. Stir in the tomato puree with 2 cups water or vegetable stock, bring it to a boil and them let it simmer down to a fairly thick sauce. 4. Stir in the cinnamon, cloves, coriander and cumin powder and the dried fenugreek leaves (if using). Add salt to taste. If the sauce is too thick, add another half cupful of water and bring it back up to a boil. 5. Add the koftas and simmer it gently for 15 minutes. Let the kofta curry rest for an hour or so. Just before serving, stir in the cream and heat the curry gently. Garnish with the chopped cilantro leaves. Serve over rice or even spaghetti. The wait is " Ogre " ! Shrek " 2sday " is here! I was wondering, have you (or anyone here) ever tried baking the kofta instead of frying? I'm tempted to try but wanted to know what experience others have had before I do. Thanks! I dunno for sure obviously... I've made felafel that was baked in the oven and they tasted nice enough... but they were very soft even when they were done. I'm sure koftas cooked the same way would just disintegrate in a sauce.
