Guest guest Posted May 17, 1999 Report Share Posted May 17, 1999 Kathleen: No, I don't have a recipe, but the only thing I have ever seen/heard of like this is at some of our local " International " and " Farmer's Markets " -- in the frozen food section, with various Asian products, they sell all kinds of various interesting " fake meats " and different types of tofu. I mean -- they have fake *everything*. I tried some " shrimp " one time and couldn't stand it because it was too much like real shrimp to me -- it was making me sick. I have even seen products like " drumsticks " that were in the shape of chicken drumsticks and the " mock duck " I saw was in the shape of a duck -- you know -- like those wooden duck things people have for decoration. Even dead ducks don't look like that -- it was kind of amusing/morbid at the same time. So, even though I can't give you a recipe -- I can direct you to whatever store(s) in your area might sell this kind of stuff. An *excellent* Thai restaurant in the Atlanta area -- okay, I'll give them a plug -- " Thai One On " (Clairmont Rd. near N. Decatur) makes some really good " fake meat " things that I can eat. They are not too much like what they're supposed to resemble -- but add extra texture & flavor to the food. I always get a dish called " Linguine Basil " with " mock ch**cken " that's very good. They will make any dish vegetarian -- you choose the dish, and the you tell them what you want in with it -- " real " shrimp, p**k, ch**ken, b**f, or tofu, " mock " whatever, etc. We've been to all the supposedly best Thai restaurants in Atlanta, and we still like Thai One On the best. I have heard that many of the Asian restaurants around here buy the very products I was talking about at those markets for use in their restaurants. Hope this is helpful. First, I must admit I had to look the word up. My little french canadian brain did not know this particular word LOL. Being quite limited up here in good quality vegetarian/vegan foods, I often have to result in lots of imagination when it comes to a diet openly frown upon by our health system and society of " bushman " !. The food is often imported form the US and results in old, stale and very expensive products. I did find a descent type of cookie (rusk) by a California company (sugar/wheat/dairy free) called " Healthy Times Biscuits for teethers " . The maple flavor is very yummy. Unfortunaly, they do get messy with the contact of saliva. My recipe was simple. I made a french type bread dough in my bread machine, then shaped it in sticks and try to not let to air in the dough itself for it would not crumble and bake it in the oven until then turn hard, very hard. It worked very well. Caleb cut a few teeths on these. I did, however add some flavoring to them as time when on for my fussy guy has a sweet tooth. I added a bit of fruit puree or flavoring as vanilla or maple. Like this, you can use the ingredients you ordinary apply to your diet (we are vegetarian, almost vegan). I also tried to use bakery bread and dried slices in the oven at 200F for a couple of hours. Yet it did resulted in some crumbling but did ok in a pinch. as for your quiche, I have one recipe from " Vegetarian Times " that use eggs substitute. If you do use this particular product, I think you will like it. Refer to folowing post...
