Bill I simply substitute seitan for be*f in the me*t-eaters recipes for this kind of thing. Slice your seitan (or tofu or whatever) thinly and marinate for an hour in a mix of soysauce and sherry if you like sherry to which you've added some finely chopped garlic and ginger. A pinch of cayenne for those who want it. Give it as long as you can in this mix and then slice up a little green onion (cut lengthways first, then crossways at an angle at about half-inch interfals) and more garlic and ginger if you think it's a good idea ;=) Put your oil in a large skillet with any added garlic and ginger and add the drained seitan/tofu, stirring quickly. Lower the heat a bit and add another dash of sherry or rice wine or whatever and cover for a minute or two. Add the marinade liquid. To thicken the sauce, make a light mixture of cornstarch and water and add a bit at a time, stirring all the while, until you've got it the way you want it. Add the green onions and anything else you fancy goes in this - such as a smattering of (canned) bamboo shoots and/or thinly sliced water chestnuts - and warm them in the sauce.
