ALOO MUTTER -------------------- Ingredients: 2 onions chopped finely 3 large potatoes, boiled and cut into medium cubes 2 cups green peas, frozen or fresh 1 cup yogurt 2 tbsp tomato paste 1/2 tsp turmeric 1 tsp coriander powder 1 tsp cayenne pepper powder (more if preferred) 1 tsp grated ginger pinch of ground cloves and cinnamon (optional) 2 tbsp oil Salt to taste 1 cup boiling water Method: 1. Fry the onions in two tbsp oil until soft and light brown. Add all the spices and fry for 2-3 minutes. You can add a tbsp of water if the spices smell like they're browning too quickly. 2. Mix the tomato paste with the boiling water and pour it over the onions. 3. Now put in the potatoes and peas and cook covered on low heat till the peas are done. (Dont let the gravy dry up). Then add the salt. 4. Add yoghurt and mix carefully, then simmer for 5 minutes. Sprinkle with a tsp of chopped cilantro leaves before serving. Serve hot with any Indian bread, but this is traditionally served with Pooris. Serves four. Lycos email has now 300 Megabytes of free storage...
