'Poultry Seasoning' (so called, sorry!)

About 'Poultry Seasoning' (with apologies for what the blamed stuff is called) -

for

those not living in the USA or near it or those who don't like to buy dried herb

mixes

.. . .

 

www.foodsubs.com (this is the Epicurious site - a good one, bearing in mind that

it

covers all foods, not just vegetarian) tells us the following:

 

" poultry seasoning  To make your own:  Combine equal parts dried sage, thyme,

and

marjoram or oregano. "

 

Easy, I think, and much easier than a trip to the shop. You could use fresh

herbs -

much nicer than dried except in emergency (and yes, we all have emergencies

which is why we keep in the dried stuff).

I think the interesting thing about these specific blends of spices are

that they can be used quite nicely with veggies...I mentioned awhile

back about Old Bay seasoning...it's specifically meant for fish/crab,

but I've found that it works really well with tofu...I'm a huge

experimentor, so I'm always trying to combinations of seasonings....

Yes, I remember that Old Bay because I wasn't familiar with it - an interesting

mix of

spices which includes some bay leaves (hence the name, no doubt!). The Poultry

Seasoning of course has no spices - herbs only.

I agree that it's great to experiment - the more ideas the better!Good for you.

 

I mention the ingredients of some of these commercial spice mixes or herb mixes

for the benefit of those who do not live in the USA and are accustomed to mixing

their own. Indeed, they may most likely never have heard of some of them, and

why

should they considering that many are devised in order to get consumers to buy

more and more 'different' things which then sit in the cupboard.

That's what my dad does...he loves Emeril, and hence loves " Bam! " (LOL),

but he got the recipie from the food network site and makes it in large

quantities...me, I can be pretty lazy myself, so I buy it at the

store...and I don't cook as much as he does...:)
