I've used soy flour in place of eggs when baking and doing things like

pancakes. one heaping tablespoon of soy flour and one tablespoon of

water will replace one egg.

 

Just be careful in trying to replace *too* many things at once ... i once

made " rubber " muffins, by subbing soy flour for the eggs and applesauce

for the oil and something else... i don't recommend them!!! :-(

I agree completely: we use EnerG egg replacer for muffins, pancakes and waffles with great results. I've found EnerG works best when only one or two eggs are called for in the recipie. Otherwise, it's best to try tofu or applesauce, depending on the function of the eggs in the recipie. Good luck!

Here is a

recipe that doesn’t call for eggs, we make this all the time and it is so

good. We also add blueberry’s to it. I got this recipe off the peta website, there are more great recipes if you want to

go look.

Ingredients:

1 cup unbleached all-purpose flour

1 Tbsp. sugar

2 Tbsp. baking powder

1/8 tsp. salt

1 cup soy milk

2 Tbsp. vegetable oil

Preparation:

Combine

the flour, sugar, baking powder, and salt in a bowl and mix thoroughly. Mix in

the soy milk and oil, and, with an electric mixer or wire whisk, beat just

until the batter is smooth.

Measure 1/3 cup batter onto a hot, oiled griddle. When

bubbles appear on the upper surface of the pancake (in about 2 minutes), lift

with a spatula and flip the pancake. Cook the pancake for another 2 minutes.

Remove from the pan and keep warm while you make the remaining pancakes. Serve

warm with maple syrup or fruit syrup.

Makes

6 to 8 pancakes

I use Egg Replacer by EnerG

Ingredients Potato Starch, tapioca starch flour, leavening (calcium lactate

[not derived from dairy], calcium carbonate, citric acid [corn derived]),

cellulose gum, carbohydrate gum

 

 

I buy this at Whole Foods Market, or Wild Oats. It is probably available in

other health food stores.
