Ener-G Egg Replacer - follow directions on box. 2 Tbsp corn starch = 1 egg 2 Tbsp arrowroot flour = 1 egg 2 Tbsp potato starch = 1 egg 1 heaping Tbsp soy powder + 2 Tbsp water = 1 egg 1 Tbsp soy milk powder + 1 Tbsp cornstarch + 2 Tbsps water = 1 egg. 1 Tbsp flax seeds + 1 cup water = 1 egg. Blend seeds and water for 1 to 2 minutes until desired consistency. 1 banana = 1 egg in cakes. Homemade egg substitute recipe Homemade egg substitutes are less expensive and just as satisfactory. They also have few calories. Here's a low cholesterol egg substitute recipe: 1 tablespoon of nonfat dry milk powder 2 egg whites from large eggs 4 drops of yellow food color Sprinkle powdered milk over egg whites, then beat them with fork until smooth. Add food color, and beat until blended. This makes one-fourth cup, which is equal to 1 large egg. If you use this homemade substitute for scrambled eggs, cook it in vegetable oil or margarine so the eggs won't be too dry. the other non-egg recipe i have used for baking is herbal and more natural, from the good herb book: create a strong brew tea from 1 cup boiling water to 1 tbs of calendula petals. strain. and pour tea into small saucepan. add 1 tbs of flaxseed. bring to a boil. boil for 3min. transfer to food blender. puree for 30 sec till seeds are coarsely crushed. strain seeds out. you are left with a gooey mixture that acts as egg. if you cook a little longer and use stronger tea it get's gooeier. let cool before using. 1/4 cup = one egg Much easier: ½ -1 banana = 1 egg in cookies (haven't tried other things) 1tbs Wheat gluten + 1 tbs H2O = 1 egg in lots of stuff Flaxseed meal mixed with water tofu Eggs aren't very necessary. There's tons of stuff to replace them. neither is butter. I've made tons of dishes by just figuring out what the non veg ingredient does and replacing it with something that does something similar. I've even had success using things like blended tomatoes (in carrot cake), blended peaches (in pancakes), etc. Many times the eggs can simply be left out.
