I ended up serving over greens & had some sauteed swiss chard on the side. Not terribly authentic but it was tasty. I made way too much swiss chard so I'm gonna make a frittata out of the leftovers tomorrow. The Rasta Red beans & Rice is super easy & delicious, btw!!
