thanks everyone for the suggestions for hotweather dishes for non-veggies. It

was a filthy week for weather here last week - when it wasn't a sauna, it was a

monsoon. Result was that we all decided eating out in aircon comfort was the

only sane solution after all. I did however make a quick pasta one day (ya

know, fusilli with basil, zucchini, cherry tomatoes, chillies, garlic) with a

green

salad, and a salad lunch the next day.

 

Having used up my pasta option, I was reluctant to do the excellent pasta

salad offered here so soon, so I used - as one of three salads - a wonderful

Southwestern Potato Salad recipe from Susan Voisin's excellent Non-fat

Vegan list. It took potatoes (I substituted those blue Peruvian wonders), red

bell pepper, celery, corn, onion, black beans, cilantro, chillies, and goodness

knows what other wonderful things all in a simple limejuice 'dressing'. Our

friends *raved* about it.

 

About our wonderful friends: I needn't have worried. They *are* friends, and of

course they were supportive of our meat-free home and lifestyle. I say 'of

course', but we all know that family and friends, especially friends of

longstanding, are not always so supportive. Nevertheless, it gave us hope

that perhaps the world is changing. If we are wrong and it is not, then it gave

us delight to know that our friends have *not* changed from being the people

we have always known.
