Tempeh!!!

Tempeh is one of my favorite foods. It is also high in high-quality protein with

very little fat. One of the simplest ways I like it is to grill it plain and put

it on toasted bread with sauerkraut, mustard and tomato for a " tempeh reuben "

sandwich. This also works well if the tempeh is already marinaded, such as

Lightlife’s " Fakin’Bacon " ( which is good in many other ways.

 

The Simply Heavenly cookbook

64-1539057?v=glance & s=books) has tons of flavoring broths that can be used on

tempeh. I also like to glaze it, which is to boil down a sauce around it, the

sauce composed of coconut milk, pineapple, mustard, onion, and jalapenos. This

glazed tempeh and the concentrated flavor of the glazing sauce are wonderful on

a very flavorful dark brown rice.

 

Raw tempeh is also nice for a quick snack. If it hasn’t been precooked, you

might be lucky enough to have it " floress " (my spell check isn’t giving me a

spelling) with its black spores, since this mature tempeh has the most flavor.

If it " floresses " white or green, or if it feels slimy, it’s not good and should

be thrown into your compost.

Tempeh???

The other day I bought some soy tempeh. I haven't cooked or eaten tempeh

in probably 10 or so years. I'd forgotten how good it is! The kind I get

here in the States, Turtle Island, comes already steamed so it's ready to

go. So far, all I've done is grilled it on the BBQ and served it on a

salad and in a BBQ stirfry (done on the barbie with one of those special

small woks with many holes in them -- between the flareups and the hickory

smoke, it was really flavorful!).

 

I was wondering, what do you all do with tempeh to spice it up a

little? Any good marinades, recipes, rubs?

Tempeh, a wonderful Indonesian invention, is one of those excellent foods

that takes on the flavour of what it is cooked with or marinated in, as you

suggest. I mainly use it in asian dishes, indonesian to be correct but I'm not a

purist. Check the Files on our homepage and look in the folder marked Main

Courses and Side Dishes - you'll find examples like these:

Thanks, Tom, for your great ideas regarding tempeh! Ironically, I recently

got rid of my " Simply Heavenly " cookbook, as I hadn't ever gotten around to

making anything from it. This morning, since I knew it would be too hot

too cook tonight, I sauteed some Surata Italian tempeh in oil with garlic

and other spices, which I served with beans and other proteins and veggies

for a composed dinner salad. Sure hit the spot!
