Hi guys, hope you're having a good weekend - but I see it is nearly August

and Time To Wake UP! LOL Vegetarian Spice is still here and is wanting to

hear from ALL our members!

 

Okay, anyone run across any new taste sensations, restaurants, recipes,

products over the summer so far? Let's hear about them!

 

OT, anyone moved house, moved jobs, acquired kids, adopted furbabies,

gone on a march or to a rally, whatever? Let's hear about it. Time is a-wasting

and here we are with one of the best veggie lists on the web and I've been

letting it go to wrack and ruin just because I've had some family stuff to deal

with. So help me out here, guys, okay?

 

Any good Veggie news? Any downers? Any new veggies out there or veggies

who have become newly vegan?

 

Or just say Hi and tell us if you are - or aren't - having a good summer! Let's

hear it!

Hi. I'm Jennifer, a new member. My husband and I have been vegeterians for a

month, now. Neither one of us miss meat, yet. I will admit, though, I had a

hard time last weekend. A girlfriend and I went out to lunch at O'Charley's.

It is new in our town and I was sorely disappointed. I had a cesear salad (that

was salty) and their speciality soup, Cheddar and Potato (with no bacon). The

soup was nasty. I need to be a little more choosy on restuarants, now.

 

We have twin girls that arrived in February. We are planning on raising them as

veggies, also. My husband has a son from his first marriage, Brandan (13) who

is moving in with us next week. He is not a big veggie eater, so I am prepared

to buy him some meat. However, I do plan on trying to sneak in some tofu and

some veggie burger crumble. Troy agrees. What Brandan doesn't know about the

switches is fine. Less special stuff I'll have to make for him.

 

I am going to our local Penzey spice store, soon. I looked through the mailing

this time with a vegeterian's viewpoint and found several spices I'd like to

try. I'll let everyone know, but I imagine a lot of you probably already know

about them. But not me, since I'm new.

 

Oh, as for a recipe we've tried lately that we love. . . . Sweet Potatoes and

Black Enchiladas. I got it from our Vegan Planet cookbook. Very good. It has

sweet potatoes, black beans, onions, garlic, diced tomatoes, chile pepper, and

salsa. I modified it yesterday and added salsa verde to it. Yummy. I don't

even miss the cheese!

Hi Jennifer - you beat me to it LOL Congrats on a month of meatlessness - a

great feeling, isn't it? (yeah, I know, except for some rotten restaurants -

doesn't that make you mad! It's soooo easy to make good veggie food!)

 

Congratulations too on the twins - what a delight (and what a lot of work!).

 

Let us know about your spice buys - someone here can help you know what

to do with them - they're a very knowledgeable group!

 

And I love the idea of your adaptation of the enchilladas recipe.

 

Good luck with Branden - I think maybe some other members can give you

hints on how to ease a teenager into vegetarianism. Anyone????

Hi Jennifer,

I just thought you might like to know this - most new vegetarians

don't know it - but Caesar dressing almost always contains anchovies.

Also, Worcestershire sauce does too. It is possible to find

vegetarian versions, but it is unlikely at a restaurant, unless it is

a vegetarian one, or at least a very veg-friendly one.

However, I have known a vegetarian or two who didn't care if

there were anchovies in their dressing, lard in their beans, or

gelatin in their dessert, as long as they weren't eating the actual

flesh of the animal directly, and if that describes you, then I guess

it won't really matter to you.

So true, Scott. And those people aren't vegetarians. And I sure wish

they'd stop labeling themselves as such. Makes it so much harder on the

rest of us when we try to order veg at a restaurant!

Thanks for the information. Yes, I do care and so does my husband. I printed

off this weekend a list of non-vegan ingredients. I'm going to try to remember

to bring it with me when I go shopping. I want to do this all the way. The

only thing I am struggling with right now is cheese. But I find if I make an

appetizing meal with lots of flavors, I don't miss the cheese. I'm doing this

because it bothers me about the animals and the health benefits. Troy, my

husband, is doing it for the health benefits then, the animals.

O.k. Pat, I'll bite.

 

I discovered a dish on 30- Minute Meals that I have yet to try for myself. It

sounds good and was touted as a alternative to mashed potatoes.

 

Take 3 Plantain Bananas, cut a smiley mouth through the length of it (do not cut

plantain iin half ...you're just making a slit in it lengthwise.

 

Wrap each in a length of wax paper and twist the ends.

 

Pop in microwave for 90 seconds (yes, Rachael Ray said 90 seconds)

 

Remove plantains, peel, put in medium/large bowl and mash like you would mashed

potatoes(they are a little more fibrous than mashed potatoes)

 

Add some EVOO (Extra Virgin Olive Oil), Chicken stock, and salt/pepper to taste.

 

DONE!!!! Wasn't that easy????....

Rising to the bait . . .

Okay, that sounds like something to get me and others out of a rut! I haven't

eaten mashed plantains, but don't know why it wouldn't work just fine - and

microwaving is a great idea for hot weather or when in a hurry.

I think I would like to add a little hint of ground spices here - but that's

just me -

cuz otherwise they might be a bit on the bland side, as bland as, say, mashed

potatoes. But they would, as described, make a wonderful sidedish for an

otherwise spicy meal or even not so spicy. Well done. But, er, I think you

meant to write *not* Chicken stock but perhaps Chikkenflavoured vegetarian

stock - regardless of what Rachel Ray, bless her, felt she had to say to put in

her dish. For those who don't care for me*t-flavoured veggie stocks, vegetable

stock should be good.

 

Thanks a bunch! When you try it and find how it goes, let us know, okay? I'm

not sure where I can get plantains around here - oh oh yes I do. Next time I'm

there . . . !

For those who are not octo-, Caesar dressing usually contains raw egg,

too (although not always in restaurants anymore due to safety concerns).

Love it! A cross between ovo and lacto? Great coinage! And thanks, Lynn -

yes Caesar dressing does have raw egg in it when made 'properly' (as some

would say) at home. Probably not a good idea in any case, even if one was

'octo' or non-vegan or whatever ;=)

 

I tend to stay away from anything except straight oil and vinegar dressing

unless I've made it myself, but . . . Maybe I should branch out! Do you have a

favourite? Anyone have a favourite - among the commercial dressings, I

mean - ?
