Usually, I love spending lots of time in the kitchen, but what with moving and all I'm a bit lazy this summer. Last night's supper was about as follows: Bean and Potato Salad (vegan) 1 white potato, cooked 1 smallish green capsicum 1/2 smallish onion 3/4 cup or so of left-over corn from last recipe 1-1/2 cups or so garbanzo beans (chickpeas), cooked few slices english cucumber cayenne to taste salt to taste ground cummin to taste lemon juiice - about 1 lemon a couple of handfuls cherry tomatoes, halved celery leaves for garnish (outta cilantro and parsley!) I chopped the raw veg (except the tomatoes) and potato into garbanzo-sized pieces, more or less, tossed with the beans and then whisked together the lemon juice and seasonings, poured it over the salad and tossed it together again with the tomato halves. Chilled for half an hour. We had it with newly baked homemade wholewheat bread. Not bad. But I'm thinking of tuscan-style cabbage (it's braised cabbage, essentially, but adds raisins) with individual shepherd-less pies (I'll probably use marinated tvp with mushrooms and onions) tonight.
