More On Epazote

Still wondering about this herb mentioned the other day, I found several sites

describing its use, as a medicine and as an herb for cooking. As a medicine it

is reputed to be good for almost anything, from preventing intestinal worms,

increasing breastmilk and increasing perspiration to curing cancer. As an

herb it is used, recommended a leaf or two according to one site, in -

obviously - mexican dishes, eg. refried beans.

One of my favorite chefs, Rick Bayless, uses epazote in many of his recipes,

which are based

on traditional Mexican fare but which are kicked up several " notches. " Rick

loves chiles of all

kinds, and incorporates them into all of his recipes.

 

For those of you interested in exploring epazote in more detail -- or if you're

simply

interested in some really fantastic recipes -- you can pick up any of Rick's

cookbooks. Rick is

not vegetarian, but lots of the recipes don't include me@t. And most of the me@t

recipes can

easily be adapted to vegetarian versions.

 

I own two of his cookbooks ( " Mexico: One Plate at a Time " and " Mexican

Everyday " ) and use

them all the time.
