I just salt some water, bring it to a boil, dump in some edamame, then, when the water returns to a boil, set a timer and boil for 5 minutes. Then I drain, salt, and eat (preferably with beer). Boil with a bit of veg broth and add to hot dishes, cool them down and toss onto salads or mix in with cold pasta salads or eat as snack. I've noticed that the texture tends to come out mixed. Unfortunately, all that was there was the kind in the shell or pod. But I understand I can cook them in a little water, cool them in cold water, shell em (whew - easier to buy em shelled if I can find them!) and *then* work with them. Thanks for the warning that they won't always be the same texture. I know it won't be me but just the way the cookie crumbles.
