Guest guest Posted August 14, 2005 Report Share Posted August 14, 2005 I recently moved from a foggy part of California to my old birth town of Tulsa/OK. It was here in Tulsa that I developed this recipe, after seeing a friend use a box mix of " Mac and Cheese " . Disgusted by what I saw, I decided to make a sort of vegan Mac-n-Cheesless dish. This recipe creates a meal for one, or a side dish of 2-4 servings. 1 Cup Uncooked Pasta Shapes 1/2 Cup Mixed Vegetables Salt, Pepper, Fine Crushed Basil, a Dash of Louisiana Roasted Garlic Hot Sauce, Fresh Garlic to taste 1/4 Cup Vegetable or Olive Oil (olive oil makes it most delicious!) 1/3 Cup Large Flake Brewer's Yeast Cook the pasta and veggies. I have been using a frozen mixed veggie pack I've found which is supposedly " fresh frozen " , plus it contains NO preservatives, salt, or other additives, and is less than a dollar for a full pound. For some reason, produce here is so expensive! Anyway, I drain the pasta and collect the hot water into a large serving bowl, which preheats the bowl. I rinse the pasta, so it will stop cooking. Then empty the large bowl, and fold in the pasta with the cooked veggies. I like my veggies slightly crips, so cook them as you'd like them. Then add the oil, and stir to evenly coat the mixture, add the spices, and fold them in well, then add the brewer's yeast flakes.
