Guest guest Posted September 18, 2005 Report Share Posted September 18, 2005 MINTED SOYBEAN PATTIES (VEGAN) This recipes is my version of a similar one in Madhur Jaffey’s _World Vegetarian_. I soaked and cooked the dried soy beans ahead of time, then used them in this dish (the rest I froze for another time). It is of course a very spicy dish and I fear that omitting the jalapeno and cayenne would rather ruin the effect ;=) 1 cup soybeans, cooked and drained 1 cup freshly cooked white rice Vegetable pan spray or a little canola oil 1/2 smallish onion, chopped 1/2 tsp finely chopped ginger 1 tsp finely chopped garlic 1 smallish carrot - 2 or 3 ounces - grated 1 jalapeno, finely chopped 2 - 3 Tbsp finely chopped fresh mint 2 Tbsp finely chopped fresh basil 1 tsp garam masala 1/2 tsp cayenne, or to taste 1/2 tsp salt A few grinds of black pepper Egg substitute equal to one egg 2 or 3 Tbsp fine toasted wholewheat breadcrumbs 1 Tbsp roughly ground walnuts Sprigs of the herbs and wedges of lemon or llime for the platter Mash the beans to a paste and mix with the rice. Spray a skillet and add the onions, ginger, garlic, carrot and jalapeno and stir unti they start to brown over a high heat. Add them to the bean mixture. Add the herbs, spices and seasonings, mix well, then add the egg substitute, breadcrumbs and walnut crumbs and mix well again. Shape into 4 patties and fry in the newly sprayed pan in a single layer for a couple of minutes on each side until browned. (I also like to have extra crumbs to roll the patties in lightly before cooking, but this is optional.) Garnish and serve.
