Hello

 

Peg was asking about Daikon. I consulted a wonderful book called " Pete

Luckett's complete guide to Fresh Fuit and Vegetables " If you can lay your

hands on it is a wonderful resource for trying new fruits and vegetables.

It will tell you about the fruit or vegetable, when it is in season and what

to look for. It also has some recipes. Here is what he says about daikon.

It is also known as chinese or Japanese radish. is a super vegetable for

dieters because it speeds up the breakdown of fat in the body. It tastes

just like radish, although somewhat hotter and it cooks wonderfully.

 

A simple recipe in this book is for sauteed Daikon

 

1 tbsp peanut oil

3/4 lb daikon scrubbed and thinly sliced

salt and sugar

1 tbsp parsley, minces

2 tbsp fresh chives, minced

2 tbsp toasted sesame seeds

 

Pour the oil into a frying pan or wok. Heat. Add the daklon and toss to

cover with oil. Sprinkle with a little salt and sugar to taste. Toss over

high heat until the daikon has mellowed a little, about 5 minutes. Remove

from the heat; toss with parsley and chives. Sprinkle with seseame seeds

and serve hot.
