Was Leeks / Recipe: Cauliflower & Leek Soup

Here's one of my favourite leek recipes:

 

 

Cauliflower Leek Soup

 

¼ - ½ cup butter

3 leeks or 2 leeks plus one onion, or 3 onions, chopped

2 - 8 cloves garlic, peeled and chopped

2-3 stalks celery, chopped

2-3 carrots, peeled and chopped

1 head cauliflower, chopped

8 cups vegetable broth

salt & ground pepper to taste

1 cup milk or cream (optional, and not really necessary)

 

Melt butter and add all chopped vegetables; sauté for 10 minutes.

Add vegetable broth and bring to boil. Reduce heat and simmer for 45

minutes.

Remove from heat and puree using an immersion blender.

Season with salt & pepper. Add milk or cream, and blend until smooth.

Adjust seasonings.

Not fair! LOL Now I'll have to go out and buy some lovely leeks to go with the

cauliflower

sitting in my refrigerator! What a lovely recipe. Thanks a bunch (of leeks) ;=)

 

Er, I'll probably add a teeny grate of nutmeg or a pinch of something hot to

keep it on

topic, eh? LOL Not that I ALWAYS eat 'hot' . . .
