[recipe] Chili Relleno Squares

i like to make this appetizer dish as it always

gets people asking for the recipe. Helps to dispel

the rumor that we vegetarians eat boring foods

and simple salads. After you cut it into the serving

squares, try taking a squirt bottle of red chili hot

sauce, like the sriracha, and making little spirals

on each. Ah-cha-cha yummy! :)

 

Chili Relleno Squares

 

3 cups shredded Monterey Jack cheese

1 1/2 cups shredded cheddar cheese

2 cans (4oz each) chopped green chilies, drained

2 eggs

2 Tbs milk

1 Tbs flour

 

Layer both cheeses and chilies in a greased

8 inch square baking dish, starting and ending

with cheese. In a bowl, beat eggs. Add milk and

flour; pour over cheese. Bake at 375 degrees for

30 minutes or until set. Cut into small squares.

Serve warm.

Yield: 16 servings
