vegan chorizo (soyrizo)

I tend to use it traditonally:

 

chorizo & eggs

chorizo & fideo

chorizo & potatoes

but have seen recipes that use it for Indian dishes as well

p.s. the other brand out there, is less in sodium but I forget the name
